Think of the dough as a balloon you're inflating slowly over the next twelve hours. The gluten on the outside is the rubber. If that skin is slack, gas pushes outward and the loaf spreads sideways. If it's taut, gas has nowhere to go but up.
That's the entire job. Every hand movement below exists to stretch the outer layer of gluten and then seal it so it holds that stretch. The round shape is a by-product.
Which reframes the usual complaint. "My loaf came out flat" is nearly always one of two things — the bulk went too long, or the shaping didn't build tension. The first is a fermentation problem. The second is this page.
Pre-shaping is a rough, gentle round done 20–30 minutes before the real shaping. It looks pointless. It isn't.
Dough coming out of bulk is a random blob with gluten pointing in every direction. Pre-shaping organises it — gets the strands roughly aligned and the mass roughly symmetrical — so that the final shape can be done in a few confident movements instead of a wrestling match. It also lets you find out how the dough is behaving while there's still time to adapt.
Then leave it uncovered for 20–30 minutes. This is the bench rest, and skipping it is why final shaping fights back. The gluten you just stretched needs time to relax before you stretch it again. Shape a tense dough immediately and it tears instead of stretching.
The boule is the more forgiving of the two shapes and the one the Calibration Loaf uses. Learn it first.
Flour the top of the rested dough lightly, then flip it so the floured side is down on the counter and the sticky side faces you. Fold the bottom third up to the middle. Fold the left side over, then the right side over that — you're making a rough parcel. Then roll the whole thing away from you so the seam ends up underneath.
Now the part that matters: cup your hands behind the ball, little fingers touching the counter, and pull it toward you in short firm drags. Rotate a quarter turn, drag again. Four or five times around. The dough grips the counter, the bottom stays put, the top skin stretches over it. You'll feel it go from floppy to taut, and you'll see the surface turn smooth and slightly shiny.
Stop when it resists you. Overworking past that point tears the skin you just built, which is worse than stopping early.
A bâtard gives you more crust per slice and a more even crumb, because the dough is less deep and heats through faster. It's also less forgiving — a weak seam shows up as a blowout down one side.
Flip the rested round as before. Fold the bottom third up and press the edge down to seal. Fold the top third down over it and seal again — you now have a rough rectangle. Then, working from the top, roll it toward you a third at a time, pressing the seam with the heel of your hand at each turn. Three tucks, three seals.
Finish by rolling the cylinder gently under flat palms to even out the length, then pinch the seam closed along its whole length. Taper the ends slightly if you want the classic pointed look.
Look. The surface should be smooth and faintly glossy, like the skin of a balloon. Visible slack, wrinkles, or a matte pebbled texture means not enough tension.
Poke. Press the side gently with a fingertip. It should feel springy and push back, not squash. A dough that dents and stays dented has no tension in the skin.
Wait sixty seconds. A well-shaped loaf holds its dome. If it visibly slumps and widens within a minute of sitting on the bench, either the tension isn't there or the dough is over-fermented — and § 01 tells you which.

Notes from the counter
Shaping is the technique people most want a video for and least benefit from watching. Video shows you what a good shaping looks like, which is the easy half. The hard half is the feel — knowing when the dough has taken as much tension as it will give — and no camera has ever transmitted that.
So the shortcut, such as it is: shape more loaves. Same dough, same recipe, over and over. It's the one part of bread that is genuinely a motor skill, closer to learning a knot than following instructions.
And a small heresy — the ugly loaf is usually fine. Sourdough got aesthetically competitive somewhere around 2020 and now there's a whole discourse about the ear. An ear is a scoring artifact. A slightly lopsided boule with an open, even crumb is a better loaf than a photogenic one that's dense at the bottom. Shape for tension, and let the looks follow or not.
