In a dry oven, the loaf's surface dries out and sets within a few minutes. Meanwhile the inside is still expanding hard — gas warming, water turning to vapour, yeast making a final burst before the heat kills it. A set crust against an expanding interior means the loaf either tears somewhere ugly or simply stops growing.
Steam keeps the surface moist and flexible for those critical minutes, so the loaf can keep climbing. That's the main job, and it's why steam only matters for roughly the first 20 minutes. After that the interior has set, expansion is over, and steam becomes counterproductive — you want dry heat to build colour and crispness.
The second effect is cosmetic but real: moisture on the surface gelatinises the starch, which is what produces the glossy, blistered crust. That's a byproduct of the same conditions.
A Dutch oven doesn't add steam. It traps the loaf's own. A 900 g dough is roughly a third water, and as it heats it releases plenty of vapour — in a sealed cast iron pot that's a saturated environment within a minute or two.
The reason this works so well is volume. Your oven is maybe 60 litres and vented; the pot is about 5 litres and sealed. The same amount of vapour that would be a faint mist in the oven is a fog in the pot.
Preheat it for 45 minutes with the lid on. The pot needs to be at temperature, not just the oven — cast iron takes far longer than air, and an underheated pot is a common cause of a pale loaf with no spring. Then: 20 minutes covered at 500°F / 260°C, lid off, drop to 450°F / 232°C, 20–25 minutes more until deeply browned and 205–210°F / 96–99°C inside.

The pattern: anything that encloses a small volume works. Anything that tries to humidify a whole domestic oven struggles, because home ovens are designed to vent moisture — that's what stops your roast steaming instead of browning.

Steam is the step where home bakers spend the most money and get the least return. There's a whole market of gadgets — steam injectors, baking systems, purpose-built pans — competing to solve a problem that a $40 cast iron pot solves completely.
And the thing worth repeating: a Dutch oven isn't adding anything. It's a lid. It works because the loaf was always producing enough steam and your oven was throwing it away.
Once you've got a pot, steam stops being a variable you think about — which is the real value. It moves the problem off your list so you can go back to worrying about fermentation, which is where the loaf is actually won or lost.
